Lesson 1: Introduction and Overview

Lesson 1 starts with an introduction to the overall food defense concepts (the prevention of intentional acts with the intent to cause harm including public health, economic, or terror.) Beyond the definitions, this lesson reviews the terrorism concept before shifting the focus to food and food defense. The content is US regulatory-focused but expands to the more universal and specific Global Food Safety Initiative (GFSI) requirements. The GFSI benchmark is the basis for food safety management systems such as BRC, SQF, FSSC 22000, IFS and others.
