Lesson 1: Introduction, GFSI Compliance Requirements, and the Foundation of the Food Fraud Vulnerability Assessment and Food Fraud Initial Screening

Lesson 1 of this MOOC expands on the previous Food Fraud Prevention MOOCs to focus on VACCP – food fraud vulnerability assessment and critical control point plan. The requirements are primarily defined in the GFSI benchmarking documents. In addition, other considerations include the US Food Safety Modernization Act, financial reporting requirements such as the Sarbanes-Oxley Act via enterprise risk management, and more general considerations such as ISO 31000 Risk Management. These basic requirements will be the starting points for considering the actions and completion of a food fraud vulnerability assessment. Specifically, the Food Fraud Initial Screening is the initial focus, which is essentially a pre-filter that often helps to vastly decrease the complexity of the activity. The additional requirements will be addressed in Lesson 2.
