Lesson 2: Application and Audit Details

Lesson 2 expands on the foundation in Lesson 1 to examine the details in the food safety management systems. It is critical to “begin with the end in mind” by understanding EXACTLY what is required in the standards. Once the basic requirements are understood, the lesson shifts to presenting the basic management systems that may be implemented at the companies being audited. This focus will help introduce the auditor to the types of documents and programs that they may find at companies. The session concludes with a very practical and simple audit starting point of a ten “yes or no” question survey.
