This foundational course in the Food Fraud Prevention training series provides a structured introduction to food document fraud — one of the most critical yet historically under-defined facilitating mechanisms in modern food supply chains. The course was developed in response to demand from both the private and public sectors for standardized definitions and a practical process for identifying and managing document-related vulnerabilities. The foundation of the course is a three-part process: inventorying the documents used across a food supply chain, assessing the vulnerability and risk associated with each document type and format, and building a prevention strategy that targets the most significant exposure points. These activities are organized across five lessons covering supply chain document types, the five document formats (e.g. physical, digital, hybrid, multi-factor, and the newly defined phantom document) document risk assessment, prevention strategy development, and an applied scenario exercise. Together, these lessons build a broad and thorough foundation of understanding that increases capacity and capability-building in food fraud prevention, and positions attendees to participate productively in more advanced workshops and annual review activities.

This course is highly recommended as a supplement to the Food Fraud Prevention: Advanced Criminology MOOC (FFCA) and the Supply Chain Management and Procurement MOOC (SCMP), where document-related concepts arise but are not the primary focus.

The topic of food document fraud emerged from recurring practitioner conversations, including discussions such as at GFSI and INTERPOL/Europol Operation OPSON meetings, where attendees noted growing concern about the challenge of assessing the authenticity and completeness of supply chain documents.
